About the role:
Lead our lamination department as a Manager - Pastry, overseeing croissant and laminated dough production from start to finish. Mentor a small team, ensure consistent quality, and contribute to recipe development and product innovation. This is a hands-on leadership role for a passionate pastry professional ready to take full ownership of their craft.
Key Responsibilities:
As the leader of our lamination department, your responsibilities will include:
- Overseeing end-to-end laminated dough production, including dough mixing, fermentation, lamination, shaping, and making croissants
- Executing existing recipes and processes with consistency, precision, and high quality
- Working independently to manage daily production schedules and outcomes
- Leading, training, and mentoring a small but growing pastry team
- Maintaining efficiency and productivity in a fast-paced, high-volume environment
- Monitoring quality control and ensuring products meet Dear Grain standards
- Contributing to recipe development, seasonal features, and product improvements
- Managing inventory, production planning, and waste control
- Upholding food safety, cleanliness, and organizational standards at all times
- Collaborating closely with bakery leadership to support operational excellence and future growth
Qualifications:
- 5+ years of experience in laminated dough production, with strong croissant expertise
- Ability to independently manage lamination production from mixing to baking
- Previous experience leading or training pastry team members
- Strong knowledge of fermentation, lamination, and quality control
- Comfortable working in a fast-paced, high-volume bakery environment
- Experience with inventory management, production planning, and waste control
- Understanding of food safety and sanitation standards
- Reliable, organized, and detail-oriented with a strong sense of ownership
Pay & Schedule:
- $50,000–$55,000 annually, based on experience (including gratuity)
- Full Time - 4 days a week - Monday to Thursday
- 7:00 AM to 5:00 PM
- Future availability on Fridays may be required based on business needs

Compensation
